Chicken Kale Caesar Salad w/ Creamy Dressing

Meet the simple summer salad that’ll have even the fussiest eaters coming back for seconds. We’ve teamed up with @Lillylloyd_ to bring you a Chicken Kale Caesar Salad that’s about to change the way you picnic.

Think crispy croutons, juicy chicken, and tangy kale, all tossed in a light, creamy dressing. It’s the kind of salad you’ll find yourself dreaming about long after the meal is over.

Ridiculously good, surprisingly easy to make, and guaranteed to become a family favourite - you’ll want to keep this one on repeat all summer long.

Ingredients

3 thick slices of Sourdough Bread
3 Tbsp Extra Virgin Olive Oil
¼ Cup Nuts / Seeds of choice1 Garlic clove, crushed
2 Tsp of Dried Basil and Oregano4 Cups of Kale, stems removed and roughly chopped
Juice of ½ Lemon
⅓ Cup Red Onion, thinly sliced
250g poached Chicken, shredded
20g Parmesan, grated
Salt & Pepper

For the Creamy Dressing:

3 Tbsp Lemon Juice & 1 Tsp Lemon Zest
15g Parmesan Cheese1 Tbsp Mayo
½ Tsp Dijon Mustard
1 Tsp Coconut Aminos or Tamari
2 Tsp Raw Honey
1 Tbsp Apple Cider Vinegar 
2 Tbsp Extra Virgin Olive Oil

Method:

1. Preheat the oven to 200 degrees and line a baking tray with paper. 

2. Roughly tear and chop the bread into smaller chunks, add to a bowl with the oil, nuts/seeds, crushed garlic, dried herb and salt/pepper - toss well and spread out on the tray. Baking for 5 minutes or so until crispy golden.  

3. Meanwhile, poach your chicken and place the kale into a large mixing bowl and dress with 1 tbsp of oil and lemon juice - massage to coat the kale - allow it to sit for 10 minutes.


4. Make the creamy dressing whilst waiting (& don’t forget about the bread!).Place all ingredients into a blender on high until it turns creamy. Set aside.


5. Construct the salad - add the chicken, ½ the crispy bread, ½ the parmesan and the onion into a bowl. Pour over the dressing and toss well. Serve into a large bowl/platter of choice and top with the remaining bread and parmesan.


6. To make the choc top, over the stove top, melt the choc and cacao butter together. Once melted, pour over the rest of the slice and place it back into the freezer to finish off.


7. Once all is set, remove and cut it up with a hot knife.
